Taking hybrid rice Ganxin 203 and conventional rice Zhong 531 as experimental materials,we studied the effects of temperature and nitrogen application rate interaction on the characteristics of rice starch RVA profile by using the rapid viscosity analyzer. The results showed that: at 38 °C high temperature or natural field temperature, Zhong 531 possessed lower amylose content, lower setback viscosity, and higher breakdown viscosity, while Ganxin 203 had higher amylose content, higher setback viscosity, and lower breakdown viscosity;under the condition of applying high level of nitrogen fertilizer,the high temperature in-creased the amylose content in rice grains of above 2 varieties as compared with the natural field temperature;under the condition of applying normal level of nitrogen fertilizer,the high temperature reduced the amylose content in rice grains of 2 varieties;under the condition of applying high or normal level of nitrogen fertilizer,in comparison with the natural field temperature,the high tem-perature reduced the peak viscosity,holding viscosity,breakdown viscosity and final viscosity,and significantly enhanced the set-back viscosity of 2 varieties; at high temperature, all characteristic values(except for setback viscosity)of rice starch RVA pro-file of 2 varieties in high-nitrogen treatment had a small decreasing amplitude than those in normal-nitrogen treatment.%以杂交稻淦鑫203和常规稻中531为试验材料,采用快速粘度分析仪研究了温度与施氮量互作对稻米淀粉RVA谱特性的影响.结果表明:无论是在38 °C高温下还是在自然温度下,中531的直链淀粉含量和消减值较低,但崩解值较高,而淦鑫203的直链淀粉含量和消减值较高,崩解值较低;在施用高氮量下,与自然温度相比,高温增加了2个品种稻米的直链淀粉含量,而在施用正常氮量下高温降低了稻米的直链淀粉含量;在施用高氮量或正常氮量条件下,与自然温度相比,高温降低了2个品种的峰值粘度、保持粘度、崩解值和最终粘度,显著提高了消减值;在高温条件下,2个品种高氮处理的RVA谱特征值(除消减值外)的降幅低于正常氮素处理的.
