响应面法优化蛹虫草中可溶性膳食纤维提取工艺研究

         

摘要

The extraction conditions of soluble dietary fiber from Cordyceps militaris residue by alkali extraction based on single factor experiment and response surface methodology were studied.The physical and chemical properties of soluble dietary fiber from cordyceps militaris residue was also analyzed.The results showed that the optimal extraction conditions were as follows:NaOH concentration 7.24%,solid-liquid ratio 1 ∶ 11,extraction temperature 60.10 ℃ and extraction time 60.34 min.Under these conditions,the yield of cordyceps militaris soluble dietary fiber reached to 15.07%,the oil holding capacity,water holding capacity,swelling capacity of soluble dietary fiber from Cordyceps militaris residue were 5.83 g/g,4.22 g/g and 7.32 mL/g,respectively.%以蛹虫草残渣为原料,通过单因素试验和响应面试验对碱法提取蛹虫草残渣中可溶性膳食纤维的工艺条件进行优化,并对其理化性质进行检测.结果表明,蛹虫草残渣中可溶性膳食纤维最佳提取条件为:NaOH质量分数7.24%,料液比1∶11,温度60.10℃,时间60.34 min.在此工艺条件下,蛹虫草残渣中可溶性膳食纤维得率为15.07%,持油力为5.83 g/g,持水力为4.22 g/g,膨胀性为7.32 mL/g.
