This paper reviewed chicken soup products on their diet therapy function and nutrition value,and also analyzed the flavor and processing technology of chicken soup to develop the new products based on the analysis.%综述了鸡汤类产品的食疗作用和营养价值,分析了鸡汤风味和加工工艺上的研究进展,并在此基础上分析了鸡汤类产品的发展趋势,以利于今后鸡汤类产品的开发。
