黄酒中活性成分与功能特性研究进展

         

摘要

黄酒起源于中国,是我国传统发酵食品.黄酒营养成分丰富,富含氨基酸、肽类、低聚糖、维生素、矿物质、类黑精和酚类化合物等.对黄酒中的生物活性成分进行总结,论述了黄酒的抗氧化、降血压、免疫调节和保护心血管等功能与黄酒中生物活性成分之间的关系.%Yellow rice wine, as a traditional fermented drink, originates from China and it contains rich nutrition including amino ac-ids, peptides, oligosaccharides, vitamins, minerals, melanoidins and phenolic compounds. In this paper, the bioactive components in yellow rice wine were reviewed, and the relations between wine functional properties (oxidation resistance, hypotensive activity, im-munoregulation and cardiovascular protection) and the bioactive components in wine were discussed.
