摘要

Different ways of controlling the amount of oxygen transferred alcoholic fermentation in enological conditions were validated at laboratory and pilot scales. Furthermore, we demonstrated that the oxygen transfer rate was quite unaffected by the fermentation progress. Calibrations before fermentation were thus representative provided that they done using must.
