食品冷杀菌技术的研究综述

         

摘要

冷杀菌技术是一种新技术,既能杀灭食品中微生物,又能最大限度保持食品色泽、香味及营养成分.依据冷杀菌作用原理不同,将其分为物理冷杀菌、化学冷杀菌、生物冷杀菌3大类,并就冷杀菌技术在食品领域的应用研究进行了综述.%Cold sterilization technique as a new technique not only can kill microorganisms in foods but also can maximally keep the color, the flavor and the nutritional ingredients of foods.According to the action principle,the cold sterilization technique is divided to physical cold sterilization, chemical cold sterilization and biological cold sterilization.We reviewed the application and research of cold sterilization technique in the food industry.
