南极磷虾资源综合利用研究现状

摘要

The resources of Antarctic krill are very abundant. It has high development and application value. The protein, fat and shell of Antarctic krill can be developed into high-value products such as polypeptides, protease, krill oil, astaxanthin and chitosan. This paper summarized manufacturing process and research process of these high-value products , which provided references for comprehensive development and utilization of Antartic krill resources.%南极磷虾的资源量非常丰富，具有巨大的商业开发和利用价值。南极磷虾的蛋白、脂肪、外壳可以开发成高附加值的生物产品，如活性多肽、蛋白酶、磷虾油、虾青素以及壳聚糖。本文综述了近几年开发这些高附加值产品的生产工艺和研究进展，为企业综合开发利用南极磷虾资源提供参考。
