Browning during the shelf life is an important index for semi-dried litchi fruit for storage. Semi-dried litchi fruit were tested under different equilibrium relative humidity (ERH) to observe their storage characteristics and browning during the shelf life. The results showed that when stored under its own water activity (aw), the semi-dried litchi fruit decreased their water content with no change in their aw. The semi-dried litchi fruit tended to increase both their water content and aw 12 days after they were stored under the ERH higher than that of their own aw. Browning of the semi-dried litchi fruit was found obvious when stored under the ERH of 42.7%, 52.8%, 70.8%, or 75.2%, but not obvious under the ERH of 84.2% or 90.2%. The ERH of higher than 84.2% was conducive to retention of the fruit color of the semi-dried litchi.%货架期褐变是半干型荔枝干的一个重要商品指标.研究不同相对湿度条件下半干型荔枝干的货架期特性以及褐变变化,结果表明:半干型荔枝干在低于自身水分活度的环境下贮存,其水分含量降低,水分活度变化不明显;在高于自身水分活度的环境下贮存12 d后,其水分含量及水分活度都明显增加.在储藏环境ERH为42.7%﹑52.8%﹑70.8%﹑75.2%时,褐变明显,84.2%和90.2%时,褐变不明显.ERH高于84.2%有益于色泽的保持.
