The fluorescence spectral characteristics of Cabernet Sauvignon red wine from Ningxia, China at different dilutions, different pH value and different determination times were investigated in this study. The treatment conditions and determination methods of Cabernet Sauvignon red wine by synchronous fluorescence spectroscopy were established. The synchronous fluorescence spectra of Cabernet Sauvignon red wines from different years were detected under the wavelength spacing (AA) of lOnm, 20nm, 30nm, 40nm, 50nm, 60nm, 70nm, gOnm, 90nm and lOOnm between excitation and emission wavelengths. The results showed that the synchronous fluorescence spectra of wine samples from different years and brands had different peaks, which would be used to discriminate different wines. However, great similarity was discovered from the synchronous fluorescence spectra of all the samples, which would provide useful fingerprints for the identification of red wines from Ningxia.%研究了宁夏原产地赤霞珠干红葡萄酒在不同的稀释梯度、不同的pH值和不同测定时间的荧光光谱特征,确立了同步荧光光谱法测定赤霞珠干红葡萄酒的处理条件和测定方法.测定了不同年份赤霞珠干红葡萄酒在波长差△λ=Em-Ex分别为10nm、20nm、30nm、40nm、50nm、60nm、70nm、80nm、90nm和100nm时的同步荧光图谱.所有葡萄酒样品的同步荧光图谱具有共同特征,可为建立赤霞珠干红葡萄酒的同步荧光指纹图谱指供依据,另外不同年份与品牌的葡萄酒同步荧光图谱也存在差异性,可以用来区别不同年份,不同品牌的葡萄酒.
