This report is a study of energy costs for five systems for marketing fresh beef from the packer to the retail display case. In two systems, the packer prefabricated the carcasses into subprimal cuts before shipping. In two systems, the carcasses were shipped intact to the retail stores. In the fifth system, the packer shipped carcasses to a central processor, where they were broken into subprimal cuts, then shipped to the retail stores. This report lists the energy costs for each system; tables show costs by category--that is, packer, central distributor or processor, transportation, or retail store; and also by energy source--electricity, natural gas, or diesel fuel. The amounts of energy used are shown in the same detail as costs.
