Evaluation of neotame and aspartame in food products: A Review

摘要

Neotame is a versatile non-calorie sweetener which is approximately 7,000 to 13,000 times sweeter than sucrose and 30-60 times sweeter than aspartame (which is 200-300 times sweeter than sucrose). Neotame is composed of two amino acids L-aspartic acidand L-phenylalanine, similar to aspartame and an additional 3, 3-dimethylbutyl group. Since neotame and aspartame are considered as intense sweeteners, a very low level is needed to sweeten the food products. In addition, some natural food components incomplicated food matrices interferes with the determination of these sweeteners. Therefore, HPLC (High-performance liquid chromatography) methods are the most acceptable analytical techniques for the determination and identification of these sweetenersin food products. Hence, the present review intended to discuss well developed HPLC methods for the determination of aspartame and neotame in different food products.
