北方中高温包包曲机械制曲工艺分析研究

摘要

研究了机械制曲在培养过程中对曲房室温和曲块品温的影响，并对比了机械制曲和人工制曲工艺所生产成品曲的感官指标和理化性能。结果表明，机械制作的成品曲达到了规定的质量标准。该研究为进一步优化机械制曲工艺条件和指导生产提供了理论依据。%The effects on room temperature and semi-finished Daqu temperature were investigated. Besides, the difference in exterior quality and physicochemical properties of Daqu produced by machine and man was analysed. The result suggested the quality of Daqu made by machine could meet the relative standards. The study gave theoretical foundation for further optimization of processing conditions and guiding production.
