“煎”的本义和引申义考辨*

“煎暠的本义是“加水煮至水减(尽)暠，引申义是油煎。现代辞书常常将二者混淆。本文对“煎暠的词义进行考辨，纠正当前学界解释的模糊、混乱。%The original meaning of“Jian”(fry)is to make water boiled away.Its extending mean-ing is to fry in shallow oil without stirring.The modern dictionaries often confuse the meanings of this word.The article tries to differentiate and analyze the original meaning and the extending mean-ings of “Jian”(fry),so as to correct the blurry explanation by current academe.
