The major pathways of lipid degradation in cereal grains are by hydrolytic or oxidative reactions,or by a combi-nation of both. The review described the distribution of triglyceride lipase,lipid acyl hydrolases (LAH) within cereal grains and their physiological aspects,and the mechanism for enzymic degradation of lipids.
