The tuna brain was processed sequentially by cleaning, freeze drying, deoiling with acetone, ultrasonic extracting with folch reagent and vacuum drying to obtain tuna brain phospholipids were 10%. The phospholipids were analyzed by TLC to obtain, PE, PC, SM, and the phospholipid fatty acids in the tuna brain were determined by capillary gas chromatography. The Results show that the tuna brain phospholipids contains a variety of unsaturated fatty acids, including DHA and EPA content were 21.1% and 2.4%respectively.%本文以金枪鱼脑为原料,经清洗冷冻干燥、丙酮脱油、Folch试剂超声提取及真空干燥得到鱼脑中磷脂为10%。将制得的磷脂通过薄层色谱分离得到PE、PC、SM三种组分,再用气相色谱测定脂脂肪酸组成。结果表明:金枪鱼脑组织中磷脂中含有多种不饱和脂肪酸,其中DHA和EPA含量分别为21.1%和2.4%。
