近年来食用植物油中强致癌物苯并(a)芘(BaP)超标事件的相继报道,引起政府和公众的强烈关注.根据已有文献报道,总结食用植物油加工过程中BaP的主要来源及迁移变化情况,并结合非食品领域BaP形成机理的报道,分析食用植物油中BaP的形成机理,为食用植物油中BaP来源和形成机理的进一步研究提供参考,以利于有效控制食用植物油中BaP含量方法的建立,达到降低和控制食用植物油中BaP的污染,保证人体健康的目的.%In recent years, the excessive content of strong carcinogenicity benzo(a) pyrene (BaP) in edible vegetable oil has been reported, which causes strong concern of the government and the public. On the basis of other literatures, the main sources, migration and variation of BaP in edible vegetable oil during oil processing were summarized. Combining with the reported BaP formation mechanism in non - food field, the BaP formation mechanism in edible vegetable oil was analyzed, which provided references for further research of BaP in edible vegetable oil on the source and formation mechanism, so it was conducive to establish effective method for controlling BaP content in edible vegetable oil, and then the purpose of reducing and controlling BaP pollution in edible vegetable oil could be achieved.
