微波技术在食品加工中的应用研究

         

摘要

With the increasingly stringent requirements for food safety and hygiene and food quality by the public,as well as people's flavor in healthy and nutritious food,the advanced reasonable food pro-cessing technology has attracted more and more attentions and praise from people.Microwave tech-nology is the advanced technology applied in food industry in recent years.The effects of various ap-plication of microwave technology in food processing,such as heating,drying,extracting on the nu-trients such as vitamin,protein in food are reviewed.%随着公众对食品的安全卫生和质量要求日益严格,以及对健康营养食品的青睐,先进合理的食品加工技术也越来越多地被人们所关注和推崇。微波技术是近年来食品行业应用的先进技术。对微波技术在食品中的各种应用,如加热、干燥、萃取等及对食品营养成分维生素、蛋白质等造成的影响做了综述。
