摘要

The aim of this study was to determine the suitability of an electronic tongue for fruit juice measurement, to develop a PCA algorithm, and to determine the critical concentration difference that is determined by means of the electronic tongue system.Except two orange juices the measured samples were discriminated at high confidence level by the electronic tongue. The evolved statistical method (PCA) was reliable. In orange juice measurement ten percent and in apple juice measurement five percent concentration difference was detectable. The influence of heat treatment on orange juice was considerable.
