PROBLEM TO BE SOLVED: To obtain a stable, hard-to-fade and easy-to-drink juice from New Zealand spinach, a kind of green vegetable. SOLUTION: This juice, which is stable and easy to drink, is obtained by crushing the leaves and stems of New Zealand spinach followed by squeezing the crushed leaves and stems; wherein, before or during the crushing process, carotenoid is added, and a protease is added to and made to act on the resulting juice.
