摘要

The present invention allows proteins and gums to be obtained in an isolated manner, with a reduced content of anti-nutriments with regard to the original ratio in unprocessed seeds. The invention uses high-protein content seeds, which water-soluble gum content difficult its obtention by methods previously described in the state-of-the-art. The process begins with the seeds flour and comprises the extraction of the protein in a solution where the gum is insoluble, the process is followed by the separation of the protein solution and the residual flour. Said residual flour is used for extracting the gum by solubilization. Finally, the protein and gum are precipitated from their respective solution and subjected to a suitable drying method.
