Disclosed are a coffee bean roasting system and a coffee bean roasting method using the same. According to an embodiment of the present invention, the coffee bean roasting system comprises: a roaster; a cooling device provided adjacent to the roaster to cool coffee beans discharged from the roaster; and a first air conditioner connected to the cooling device to supply cold air to the cooling device. The cooling device further comprises: a main body part forming a cooling space in which the coffee bean is cooled by cold air, and having a cold air supply port connected to the first air conditioner at the top; a cooling plate provided inside the main body part to support the coffee bean and having a plurality of first through holes through which the cold air supplied from the cold air supply port passes; and a cool air distribution part provided in the main body part and disposed between the cold air supply port and the cooling plate for uniformly distributing the cold air supplied from the cold air supply port to the top of the cooling plate.
