The objective of this study was to analyse the proximate composition and physicochemical properties of different types of rice. In total, 20 varieties of rice were used (domestic rice varieties 19, imported varieties 1). Moisture content ranged from 11.11 +or- 0.20 to 3.28 +or- 0.03%. Crude protein and crude lipid contents ranged from 5.04 +or- 0.03 to 7.02 +or- 0.10% and 0.18 +or- 0.01 to 0.73 +or- 0.05%, respectively. Mineral contents were Ca 3.56 +or- 0.11-6.69 +or- 0.08 mg/100 g; Na 3.39 +or- 0.01-17.43 +or- 0.04 mg/100 g; P 64.12 +or- 0.88-102.0 +or- 0.36 mg/100 g; Zn 0.95 +or- 0.01-1.75 +or- 0.0 mg/100 g; Fe 0.19 +or- 0.0-0.69 +or- 0.02 mg/100 g; Mg 9.89 +or- 0.47-23.3 +or- 10.21 mg/100 g; K 47.11 +or- 3.49-82.19 +or- 1.08 mg/100 g; and Mn 0.47 +or- 0.0-1.14 +or- 0.01 mg/100 g. Eighteen types of rice had small kernels. Amylose contents ranged from 10.3 +or- 1.27 to 19.4 +or- 0.15%, while starch values ranged from 70.8 +or- 2.67 to 80.1 +or- 5.09%. Alkali digestion value was described as grade 5-6 and gel consistency was shown to be "soft" regardless of the rice type.
