Today, fruit juices and fruit drinks are available in almost all imaginable traditional and exotic flavours. Typically there are three distinct classes of such drinks; pure fruit juice (either freshly squeezed or reconstituted from concentrate), so-called fruit nectar (with only a certain proportion of actual fruit juice) and drinks containing fruit juice which have even less actual juice. In addition to these traditional products product innovations such as the controversial alcopops, malternativesand health drinks, are entering the market. All of these are characterised by the following common components in their composition: concentrates, water, sugar, additives and further minor components (such as fruit acids, pulps, flavourings, etc.) which are present in varying concentrations in the final products. The manufacture of fruit juices and fruit juice based drinks consists generally of the following process steps: processing and dosing of the components, mixing, pasteurisation and filling.
