In the confectionery industry, the final processing step when manufacturing panned products is most commonly glazing with an alcohol-based shellac coating. Shellac glazes provide a shiny finish to panned candies like chocolate-covered almonds or jelly beans. Moreover, the glaze coating provides protection from physical damage that may scuff or dull the surface. In addition to providing gloss and physical protection, shellac coatings also act as protective barriers against oxygen and water vapor.
