The structured food product useful as meat-like product, comprises food components intercalated in protein matrix having foamed aqueous solution from milk protein, which contains globular whey protein and/or micellar casein. The protein matrix is stabilized by denaturation of the protein and contains gas bubbles opened by shears. The food components are fixed by an adhesive. The aqueous solution contains whey protein, albumin powder and/or skimmed milk powder and wheat fiber. The food components consist skimmed milk powder. The structured food product useful as meat-like product, comprises food components intercalated in protein matrix having foamed aqueous solution from milk protein, which contains globular whey protein and/or micellar casein. The protein matrix is stabilized by denaturation of the protein and contains gas bubbles opened by shears. The food components are fixed by an adhesive. The aqueous solution contains whey protein, albumin powder and/or skimmed milk powder and wheat fiber. The food components consist of skimmed milk powder. Further food components are intercalated in the gas bubbles and are plant oil, vegetable fibers, roughage, salt, spices or aroma materials or their combinations. The adhesive contains aqueous solution of starch and/or albumin powder. An independent claim is included for a procedure for manufacturing structured food product.
