摘要

In China, cake is highly favored in the diet, especially Chiffon Cake, which because of the characteristics of egg flavor, soft and delicious texture, fashion modeling, has become the star of the cake, obtaining the popular favor. With the advent of electric egg beater, home oven, Chiffon cake made at home has become an important variety many people want to try, and the scientific formulation and production process is the key to decide the success or failure of the cake.%在我国,蛋糕类点心做为一类辅食于饮食中备受国人青睐,尤其是戚风蛋糕,其蛋香浓郁、松软可口、造型时尚的特点成为蛋糕届的明星,深受大众青睐.随着电动打蛋器、家庭烤炉的出现,在家制作戚风蛋糕已成为很多人尝试的重要品种,而科学的配方及其制作工艺是决定蛋糕制作成败的关键.
