食品中合成着色剂检测技术的研究进展

摘要

现今食用合成着色剂的应用颇为广泛，各种检测技术也在迅速发展，主要有液相色谱法、毛细管电泳法、薄层色谱法、示波极谱法和分光光度法。为了科学、安全地使用食用合成着色剂，对食品中合成着色剂检测技术的研究进展进行了综述。%The synthetic colorants have been widely applied to food, and the de-tection techniques have been also devel-oping rapidly, including liquid chro-matography, capillary electrophoresis, thin layer chromatography, oscillopo-larography and spectrophotometry. In or-der to scientifically and safely use syn-thetic food colorants, research progress on the detection techniques were summa-rized.
