食品黄曲霉毒素总量检测方法的研究与应用

     

摘要

食品中黄曲霉毒素总量(total aflatoxins,TA Fs)污染残留的广泛性、严重性和危害性倍受食品行业的关注,单一黄曲霉毒素检测已不能满足行业的技术需求,该文就食品TAFs目前所使用的检测方法如生物分析法、理化分析法和免疫分析法的研究进展、应用情况、技术优势及缺陷等简要综述,旨在为食品TAFs检测方法的选择使用和发展完善提供借鉴和思路.%The total aflatoxins(TAFs) in food was widespread,serious and harmful to the food industry concern and a single aflatoxin detection had been unable to meet the needs of the food industry.The research progress,application situation,technical advantages and defects of detection methods for TAFs in food currently used such as bioassay(BA),physicochemical analysis(PCA) and immunoassay (IA) were briefly reviewed.The paper provides references and ideas for TAFs detection in food and detection method improvement.
