In this paper,to determine aluminium in vermicelli bought in the market by the Chromazurol S spectrophotometric method and the chromium content by dual wavelength dual indicator catalytic kinetic spectrophotometry.As well as comparing our experimental statistics with the current < food additives determination results and our use of standard GB 2760-2016>.To give a judgement whether added reasonable aluminum in the process of making vermicelli and whether added the illegally industrial gelatin.Through the determination of aluminum and chromium content on 6 kinds of vermicelli bought in the market,we found that the aluminum content did not exceed the standard.But the chromium content exceeded the standard national several times.It is presumably that added industrial gelatin in vermicelli processing process.The results suggest that people eat less unqualified vermicelli in daily life.%利用铬天青S分光光度法测定市场上的粉条中铝的含量,利用双波长双指示剂催化动力学光度法测定铬含量,测定结果与我国现行的《食品添加剂使用标准GB 2760-2016》比较,判断粉条加工过程中明矾添加是否合理、是否违规添加了工业明胶.通过对市场上购买的6种散装的低价格(3~5元/kg)粉条中铝和铬含量测定,发现铝含量并未超标,铬含量超标国家标准几十倍,推测可能在粉条加工过程中添加了工业明胶.根据试验结果建议人们在日常生活中少食不合格的粉条.
