The comparative study on the flavor compounds of three brands of Zhenj iang aromatic vinegar is isolated by SPME and analyzed with GC-MS-O.There are 52 compounds in the samples, 18 compounds in common for each.The same flavor compounds of different brands of vinegar are acids,esters,alcohols,ketones and heterocyclic compounds.There are big differences between the kinds and content of flavor compounds of different brands of Zhenjiang aromatic vinegar,which can be used to distinguish and evaluate different vinegar samples.%采用固相微萃取(SPME)与气相色谱-质谱-嗅闻联用(GC-MS-O)对市售3种不同品牌镇江香醋的香气成分进行了比较研究。鉴定出其中的52种香气成分,主要是酸、酯、醇、酮和杂环类化合物,其中18种香气成分在3种不同品牌镇江香醋中均检测到,不同品牌镇江香醋所含的香气成分种类及其含量均存在较大的差异性,可据此区分评价不同醋样。
