反应介质对脂肪酶活力及催化猪油水解和甲醇解的影响

         

摘要

The effect of reaction media on lipase activity and lipase-catalyzed hydrolysis and methanolysis of lard was studied.The reaction media included organic solvents, buffers and glycerol.The results indicated that the reaction media had significant effect on lipase activity and conversion rate of lard both in hydrolysis and methanolysis.When 20% (v/v)n-hexane was added, the conversion rate was 8.8% higher than that without n-hexane added.In the reaction system containing 40% n-hexane, the conversion rate increased by 29.2% when 20% (v/v) phosphate buffer (50mmol ·L-1, pH 6.8)was added compared to the addition of equal volume of water.Furthermore, the conversion rate increased by 17.2% when 1.83% (v/v) glycerol was added in the reaction system containing 40% n-hexane and 20% phosphate buffer.%研究了反应介质对脂肪酶活力及其催化猪油水解和甲醇解的影响,反应介质包括有机溶剂、缓冲液和甘油.实验结果表明,在脂肪酶催化猪油水解和甲醇解体系中,反应介质对脂肪酶活力和猪油转化率影响很大,添加20%(v/v)的正己烷比不添加正己烷的转化率提高8.8%,在40%的正己烷体系中添加20%(v/v)50mmol/L、pH 6.8的磷酸缓冲液比添加等量水的转化率提高29.2%,在40%的正己烷体系和20%的磷酸缓冲液体系中添加1.83%(v/v)的甘油比不添加甘油的转化率提高17.2%.
