酸性硫酸钙对水蜜桃贮藏保鲜效果的研究

     

摘要

研究了不同的酸性硫酸钙(Acidic calcium sulfate,ACS) 稀释液处理(ACS-10-3、 ACS-10-4、 ACS-10-5和 ACS-10-6) 对'湖景蜜露' 水蜜桃在 2-4 ℃ 下贮藏保鲜效果的影响.结果表明: 经 ACS 稀释液处理的水蜜桃各项指标均显著优于对照组,且能有效地延缓水蜜桃果实品质下降;处理 25 d 时,ACS-10-3 处理有效保持了桃果实硬度和色泽,降低了呼吸速率和果肉褐变程度,与对照组相比, 桃果腐烂率下降了 87. 50% , PG 和 PPO 活性分别降低了 28. 19% 和 36. 13% , POD 活性则提高了 86. 05% , 明显延缓了水蜜桃软化衰老进程, 保持了较好的品质.%The effects of different acidic calcium sulfate(ACS) diluents treatments(ACS-10 - 3、 ACS-10 - 4、 ACS-10 - 5和 ACS-10 - 6) on the storage and preservation of 'Hujingmilu'peach under 2-4 ℃ were studied. The results showed that the indexes of the peach treated with ACS dilution were significantly better than the control group,and the quality of peach could be delayed effectively. At 25 days,ACS-10 - 3 group could effectively maintain the firmness and color of peach,decrease the respiration rate and the degree of flesh browning,compared with the control group,the decay index of ACS-10 - 3 group decreased by 87. 50% ,PG and PPO enzyme activity were decreased by 28. 19% and 36. 13% , but POD enzyme activity was higher than 86. 05% , significantly delayed the softening of peach the aging process,and maintain a good quality.
