This paper reports the kinetics of thermal degradation of Dendrobium Sonia ‘Red Bom’ anthocyanins extract (DSAE) containing the red flavylium cations of anthocyanins. The stability of DSAE was studied at different temperatures for different periods of storage by measuring the absorbance at the wavelength of maximum absorption in the visible light region. The thermal degradation profiles at all temperatures followed first order kinetics. It was found that the t1/2 values of red DSAE at 80 and 100 °C were 187 and 90 min, respectively. On storage at 4, 27, 37 and 45 °C, the red DSAE has t1/2 values of 183, 96, 62 and 52 days, respectively. As red DSAE is relatively stable at low and high processing temperatures, it has the potential to be used as functional colorant for food, cosmetic, pharmaceutical, textile, paint and other industries.
