Contamination of food products with Listeria monocytogenes may cause listeriosis and other illnesses, posing a risk to consumers' health. To prevent and control this contamination, the present study evaluated the efficiency of six cleaners on biofilms of five L. monocytogenes isolates obtained from different sources. Cleaner effectiveness was evaluated by determining the minimum concentration to achieve ≥ 3 log_(10) reduction in viable cell numbers. In order to simulate a food processing environment, L. monocytogenes biofilms were incubated with three substrates: lipid (fish oil), protein (Bovine Serum Albumin, BSA), and hard water (200ppm), for 1 hour at room temperature, before adding the cleaners and rinsing.
