Spray drying is a well-established and widely used drying method for processing powdered foods. Physical properties of bovine colostrum powders have significant effects on their quality and characteristic for packaging. Three drying parameters, namely, inlet air temperature, drying air flow rate, compressed air flow rate, having significant effects on physical properties of bovine colostrum powders, were chosen as independent variables and whose effects on physical properties after drying were investigated, and regression analysis was used to fit linear models. Experimental results indicate that moisture content and solubility are reversely proportional to inlet air temperature, drying air flow rate, compressed air flow rate. Bulk density increasesas compressed air flow rate and drying air flow rate increase, as inlet air temperature decreases. Effects of three drying parameters on three physical properties of bovine colostrum powders were extremely significant, and regression equations to fit linear models were good.
