SEPARATION OF STONE CELL FROM PULPPCONTAINING FRUIT JUICE IN PREPARATION OF NECTAR CONTAINING PEAR FLESH

摘要

PURPOSE:To prepare pear nectar containing flesh, by mixing ground pear puree with a specific amount of diluting water under agitation and shaking, and leaving the mixture at rest, thereby separating the floating pulp from precipitating stone cells in high efficiency. CONSTITUTION:One part of pear puree is diluted with 1.0-1.4 parts of fresh water. the diluted puree is stirred with fans 8 in the upper part of a separating tank 1 having a rather large cross-sectional area. After thorough mixing, the fans 8 are stopped, and the mixture is left at rest. As the result of the procedures, the entanglement of the stone cells and the pulp in the puree is disentangled, and the both components are separated each other. The pulp, having a lower specific gravity, floats to the upper part of the separating tank 1, and taken out together with the pear juice from an outlet pipe 5 through a float 7; and the stone cells, having a higher specific gravity, are collected to the bottom of the tank 1 and taken out through an outlet valve 3.
