Method and device for preparing and processing dough, more particularly bread dough, in which the dough, after the dough constituents have been mixed and after kneading in a kneading device, is divided into portions which correspond to the size and weight of the goods which are to be baked, and these portions are then fed to a proving machine. According to the invention, the outgoing stream of kneaded dough leaving a continuous kneading device is shaped virtually without exerting pressure into a continuous strand of constant cross section, which strand is transferred to a conveyor surface which is moving at a speed which corresponds to that of the outgoing stream, on which conveyor surface continuous measurement of the amount of dough present in the downstream end section of the dough strand takes place, while, when a predetermined measured value is reached, this end section is cut off the strand by means of a blade which is disposed at the beginning of the conveyor surface.
