A method of pasteurization of a mixture, essentially liquid, comprising at least egg white, wherein said mixture is heated to a pasteurization temperature of between 67 and 71.5 ° C if the mixture is not sweet, and a pasteurization temperature of between 67 and 85 ° C if the mixture is sweet, for a sufficient time, for obtaining a pasteurisation threshold value at least equal to 100; and resulting mixture.
