PURPOSE: Provided is a manufacturing method of Camellia sinensis wine using stems and raw leaves of Camellia sinensis and raw japanese apricot. The wine is excellent in removing hangover and has good aroma and bouquet. CONSTITUTION: The manufacturing method comprises the steps of: diluting ethanol and dipping raw japanese apricot; removing remaining impurities and pigments therefrom; and fermenting them. Particularly, it comprises following steps: (i) 0.15kg of japanese apricot is added to 1 liter of ethanol with leaves and stems of Camellia sinensis then pre-fermented; (ii) remaining extract is added with water then extracted; and (iii) each extract from step(i) and (ii) is mixed together and fermented, then followed by adding water and sweetener, optionally spice or pigment, cold-filtering mixed extract and obtaining supernatant. Wherein, the sweetener is selected from sugar, honey, oligosaccharide and the like.
