PROBLEM TO BE SOLVED: To develop a method for controlling the hardness of wheat grains and the particle size of wheat flour.;SOLUTION: Provided is a method for reducing the hardness of wheat grains and/or the particle size of wheat flour, comprising introducing 5H chromosome among seven types of chromosomes of Hordeum into wheat.
