FIELD: food processing.;SUBSTANCE: wheat flour, hen's eggs, drinking water and salt are mixed to prepare dough. It is molded, rolled and cut to make noodles. Horse meat is cut and chopped, onions are cut, chopped and parboiled. Thereafter, to prepare forcemeat, horse meat, onions, salt and chilly pepper are mixed. Meat balls are made from forcemeat. Potatoes and paprika are cut and parboiled, dill is cut and frozen. Potatoes, paprika, dill and salt are mixed avoiding access of oxygen. Noodles, meat balls, the mixture and meat and bone broth are packed, sealed and sterilised.;EFFECT: enhanced digestibility comparing with similar dish.
