PROBLEM TO BE SOLVED: To provide a method for producing rice noodle comprising multiple times of pregelatinization of rice component-containing raw material: to provide rice noodle obtained by the method: and to provide dried noodle made of the rice noodle.;SOLUTION: The method for producing rice noodle includes: a process for charging rice component-containing raw material; a sorting process; a rice-washing process; a soaking (germination) process; a dehydration process; a steaming (pregelatinization) process; a drying (stable pregelatinization) process; a pulverizing process; a hot water-adding (pregelatinization) process; a mixing process; and an extrusion (final pregelatinization) process. The rice component-containing raw material is one selected from polished rice, brown rice and germinated brown rice, and/or a mixture thereof, and a functionality-improving material is added to the mixture in a hot water-adding/mixing process during a noodle-making process.
