The present invention relates to fermented enzyme foods and a manufacturing method of the fermented enzyme foods using a complex fermentation technique and, more particularly, a manufacturing method of the fermented enzyme foods comprising: a step for steaming a mixture of brown rice and rice bran; a step for fermenting the mixture by inoculating Aspergillus oryzae and lactic acid bacteria; a step for drying the fermented mixture; and a step for pulverizing the dried fermented mixture and shaping into one dosage form selected from the group consisting of granules, powder, pills, capsules, and tablets. The fermented enzyme foods manufactured by the method promote digestive process since bioactive substances and fiber in the brown rice and rice bran, which are difficult to be absorbed in the body, are decomposed and have an excellent effect in increasing absorbability in the body and an anti-oxidative effect, thereby being useful as a fermented food improving nutrition imbalance and intestinal absorption of nutrients and bioactive substances.
