Disclosed is a method of producing bacterial cellulose using steamed dregs of citrus fruits. According to the present invention, when dregs of the citrus fruits are used to produce bacterial cellulose, it is possible to provide a bacterial cellulose production method capable of producing bacterial cellulose with no significant difference in yields and properties as compared with a method using juice of the citrus fruits if the dregs are steamed.
