PROBLEM TO BE SOLVED: To provide a fish processing method that can remove a head kidney and a body kidney from a fish with the good yield.;SOLUTION: A method is provided for processing fish by conveying the fish while holding the fish in which a head is cut and internal organs are removed in the state where the head cutting side is directed toward a conveying direction and a ventral part is turned to the downward, and by using a device for removing a body kidney existing along a backbone using two fillet cutters disposed in the shape of reversing V-shape. The fish processing method for picking a fish meat is characterized by: (a) cutting the head of the fish at the position where the head kidney is left in the fish; and (b) lowering the position of the fish to the fillet cutters at the position where the head kidney is present so that the head kidney can be removed with the fillet cutters, and lifting the fish to the highest position where the body kidney can be removed at the point of time when the head kidney passes.;COPYRIGHT: (C)2015,JPO&INPIT
