The present invention relates to a manufacturing method of Korean chopped noodles including potato starch, tapioca and gluten. According to the present invention, the chopped noodles comprises a raw material of chopped noodles; wheat flour used for manufacturing noodles; potato starch; tapioca; 100% gluten of the wheat flour; refined sa a small amount of soybean oil; and a proper amount of table salt, balancing nutrients and being manufactured at economical cost by using affordable potato starch, tapioca and gluten compared with an existing chopped noodle manufactured with only the wheat flour. In the manufacturing method of the present invention, the manufactured chopped noodle has better taste, glutinosity and nutrients and improves texture, taste and smell when compared with an existing chopped noodles including potatoes.
