The present invention relates to noodles containing Chinese weatherfish; and to a manufacturing method thereof. The manufacturing method of noodles containing Chinese weatherfish comprises the following steps: (S1) boiling Chinese weatherfish, drying the same, and performing a grinding process to make Chinese weatherfish powder, or boiling Chinese weatherfish, taking out the same, and performing a grinding process to make Chinese weatherfish liquid; (S2) adding 1-10 parts by weight of the Chinese weatherfish powder or Chinese weatherfish liquid manufactured in the step (S1) with respect to 100 parts by weight of wheat flour, adding water to the Chinese weatherfish powder or Chinese weatherfish liquid and the wheat flour, and performing a kneading process; and (S3) aging dough containing Chinese weatherfish obtained in the step (S2) at 20-30°C, and performing rolling and cutting processes to make noodles. The noodles containing Chinese weatherfish manufactured according to the present invention secures high nutritive values of Chinese weatherfish consistently, and has an enhanced chewy texture caused by protein included in Chinese weatherfish. Furthermore, the peculiar smell of Chinese weatherfish is controlled so the noodles containing Chinese weatherfish can have greatly increased functionality and palatability. In addition, the noodles containing Chinese weatherfish in the present invention secures the savory taste and rich taste of fish. Accordingly, the use of seasoning can be greatly reduced during a noodle food manufacturing process using the noodles containing Chinese weatherfish. Therefore, the noodles containing Chinese weatherfish in the present invention completely relieves consumers′ distaste for Chinese weatherfish, and thus can be popularized as highly-nutritious functional noodle food which can be enjoyed regardless of age and sex.;COPYRIGHT KIPO 2016
