The present invention relates to instant boiled rice which is eaten by being restored by water from a dried state. According to the embodiment of the present invention, a method for manufacturing the instant boiled rice includes: a cooking step of cooking boiled glutinous rice; a reversing step of reversing the boiled glutinous rice by placing the boiled glutinous rice into a water tank to remove starch stained on the outer surface of each grain by separating the glutinous rice cooked in the cooking step into a grain form; a water removal step of removing water on the outer surface of the glutinous rice separated in the grain form by the reversing step; a freezing step of freezing the glutinous rice by placing the glutinous rice into a freezer supplying cold air from the lower part to the upper part while the glutinous rice in which the water is removed in the water removal step is placed into a freezing cage divided into multiple cooling plates; a drying step of drying the glutinous rice frozen in the freezing step by heating the glutinous rice at a predetermined temperature; and a crack prevention step of preventing a crack from being generated on the surface of the glutinous rice due to different temperature when glutinous rice is dried in the drying step, by partially defrosting the glutinous rice frozen in the freezing step between the freezing step and the drying step. Therefore, the method for manufacturing the instant boiled rice can rapidly manufacture the instant glutinous rice by reducing freezing time of the glutinous rice.
