the present invention provides for the preparation and processing of flours obtained from the fruit and bark of the stem of the jucá (libidibia ferrea), found in the northeast region of brazil. the differential of this invention is based on the manufacture of an unprecedented, natural product, with a pleasant taste, without the addition of preservatives and flavorings, with a high content of carbohydrates and minerals, in order to serve consumers who are looking for a healthy diet. the methodology developed in the elaboration of the invention is simple and low cost, easily produced by industries, cooperatives and small companies, being used easily by the food industry, replacing traditional flours, in order to enrich new formulations and provide crispness in fried products. in addition, the invention offers an option to take advantage of an underutilized vegetable, adding value and promoting income generation, mainly for family farming, since this vegetable grows spontaneously.
