The health benefits of fenugreek-enriched cereal products.

Cereal products that achieve the health benefits of whole-grain foods using lesser-known crops, such as fenugreek, are discussed. Aspects considered include: beneficial effects of whole fenugreek seeds; protein content of fenugreek seeds; fenugreek fibre; fenugreek oil; fenugreek flavonoids and isoflavones; fenugreek saponins; additional benefits associated with fenugreek seeds; and fenugreek seed-enriched cereal products.
